Celebrating the launch of the Festival of Australia, this event features the latest premium Australian food and beverage offerings to Hong Kong. With an Aussie-BBQ, specialty cocktail and free-flow drinks, including characteristic Australian wines, the event promises a fun afternoon of relaxed networking and entertainment.
Joining us for this very special event will be two incredible Celebrity Chefs - Mark Olive (aka "the Black Olive"), of Midden by Mark Olive, Sydney and Shane Osborn, of Arcane Collective, Hong Kong.
Australian native ingredients will be featured for the first time in the Festival of Australia. AustCham is thrilled to welcome one of Australia’s foremost experts on the use of native ingredients, Chef Mark Olive, to the event. Mark (aka ‘The Black Olive’) is Australia’s renowned Indigenous Chef with his The Outback Cafe series televised in living rooms all over the planet. He is the Chef and Ambassador at Midden by Mark Olive– an Australian restaurant featuring native ingredients at the iconic Sydney Opera House. Mark is the author of "Mark Olive's Outback Cafe : A Taste of Australia" and will have books at the event available for signings.
Joining Mark will be Australian chef Shane Osborn, CEO of Arcane Collective, Hong Kong. Shane is one of the most recognisable figures in the hospitality industry with his trio of elevated casual dining restaurants that also prioritise sustainability and diversity. Originally from Australia, he previously spent 20 years in London, where he earned two Michelin stars at French restaurant Pied à Terre, the first of them aged just 29, becoming the first Australian chef to do so. In 2018 he represented Australia in the Netflix global culinary competition, The Final Table.

Arcane Collective
Shane Osborn is one of the most recognisable figures in the hospitality industry with his trio of elevated casual dining restaurants that also prioritise sustainability and diversity.
He launched his first Hong Kong eatery, the acclaimed modern European restaurant Arcane, in 2014, and followed it up with casual, all-day dining bistro Cornerstone and the plant-driven, meat-free Moxie. He united the three in 2021 under the umbrella of The Arcane Collective.
Originally from Australia, he previously spent 20 years in London, where he earned two Michelin stars at French restaurant Pied à Terre, the first of them aged just 29, becoming the first Australian chef to do so.
